One of the great pleasures of the Okanagan early autumn is sitting outside in the warm of the evening sun and crisp autumn breeze, hanging out with friends and getting the grill fired up one last time. It’s no different here at the Bowmont Motel.
Except, we’ve got a heated pool to jump into while the meat’s grilling.
To celebrate this gorgeous time of year in the South Okanagan, we thought we’d share one of our favourite grill recipes. It will be like having a little bit of the Bowmont right there at your house.
Or better yet, grill this chicken up here during your stay at the Bowmont Motel. You bring the chicken, we’ll supply the grill, friends and good times.
Okanagan Red Wine Grilled Chicken Marinade
No visit to the Okanagan is complete without sampling some of the best our wineries have to offer. And while sipping some of that award winning wine, we thought why not add some to the diner? And so, our red wine chicken marinade was born.
- 2 cups dry red wine.
- 1/2 cup olive oil.
- 1/4 cup soy or teriyaki sauce.
- 4 scallions, sliced.
- 2 cloves garlic, minced.
- 1 tablespoon brown sugar.
Combine all the liquid and dry ingredients into a mixing bowl. Layout 6 to 8 chicken pieces in a pan large enough to marinate, pour marinade over top. Store covered in the refrigerator for 2 to 6 hours. Grill! Be sure to make some extra to brush on the chicken while it’s on the grill.
